English Flapjacks



PREP TIME: 5 MINS

COOK TIME: 20 MINS

SERVES: SIX


INGREDIENTS:

1/2 cup (1 stick) unsalted butter
1/2 cup brown sugar
1 tsp salt
1/2 tsp vanilla
1/4 cup golden syrup*
2 cups oats 




Every now & then I get a severe craving that just won't go away. Ever since my pregnancy with Ivy, they have been much stronger & are usually associated with a childhood memory, not unlike these flapjacks. My Mum used to make them for us when we were kids, & although they are a fairly simple dessert, what they lack in ingredients, they make up for in remarkably rich flavor! And BONUS! You could add raisins, chocolate chips, nuts, or top them with chocolate if you want to spice them up a bit! Personally, I never get tired of taking a bite out of a traditional old flapjack but I'd love to see what creations you come up with!

INSTRUCTIONS:

1. Preheat oven to 350 degrees. Spray or butter an 8x8 metal or glass baking pan.
2. Combine butter, sugar, vanilla & syrup in a saucepan & stir over medium heat until butter is melted & sugar is dissolved.
3. Remove from heat & add oats & salt. Stir until coated.
4. Transfer mixture to prepared pan & distribute evenly.
5. Bake for about 18-20 minutes until top is golden (edges will be darker).
6. Let cool for about ten minutes before cutting into squares or triangles & serve!

*A type of syrup popular in Great Britain; available at some specialty stores, international marketplaces, & Britihs import stores.
