My cousin Amy makes these amazing pancakes several times a week & posts them to her instagram. She is constantly posting these amazing healthy meals, but her pancakes always take the cake (or plate) with their delicious, guilt-free toppings & syrup drizzled all over! Unfortunately She lives in the UK & I live in Utah, so I can't just wander over to her house for breakfast, BUT I can share one of her wonderful recipes with you all to try for yourselves! I did change it a little due to the massive elevation difference between us, but I think you'll find once you have just one bite, breakfast will quickly become your favorite meal of the day!
PREP TIME: 5 MINS
COOK TIME: 15 MINS
SERVES: FOUR
INGREDIENTS:
1/2 cup milk (you can sub for non dairy)
1 large egg
1 banana (best if very ripe)
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla (optional)
dash cinnamon & nutmeg (optional)
1 1/2 cups oats
TOPPING IDEAS:
fresh berries
real maple syrup
chocolate chips
fresh banana slices
almonds or pecans
apple butter
peach or pear slices
low fat yogurt
INSTRUCTIONS:
1. In a blender, pour in milk, egg, banana, vanilla, oats, baking powder & salt (and any spices you'd like to add).
2. Blend until smooth. Consistency should be fairly thick.
3. Heat skillet over medium heat. Once warmed, spray with non-stick low fat cooking spray. My cousin likes to use coconut oil spray.
4. Pour pancake batter into skillet in round circles.
5. Cook for 2-3 minutes on one side. Turn over & cook for another 1-2 minutes.
6. Serve with maple syrup, yogurt, fresh fruit, or chocolate chips & enjoy!
